Fried Ribs with Spicy Sauce
1️⃣ Prep the Ribs
You’ll need
- 2–3 lbs pork ribs (baby back or spare ribs)
- Salt & pepper
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp cayenne (adjust to bravery)
- Oil for frying
Tenderize first (don’t skip this)
- Cut ribs into individual pieces.
- Simmer in salted water for 35–45 minutes until just tender.
- Drain and pat very dry.
2️⃣ Breading
You’ll need
- 1 cup flour
- ½ cup cornstarch (extra crunch)
- 1 tsp paprika
- ½ tsp cayenne
- Salt & pepper
How
- Toss ribs in the seasoned flour mix until fully coated.
3️⃣ Fry
- Heat oil to 350°F / 175°C
- Fry ribs in batches for 4–6 minutes until golden and crispy.
- Drain on a rack or paper towels.
4️⃣ Spicy Sauce (THE STAR)
You’ll need
- ½ cup hot sauce (Frank’s, Louisiana, etc.)
- ¼ cup honey or brown sugar
- 2 tbsp butter
- 1 tbsp soy sauce
- 1 tsp garlic (minced or powder)
- Optional: chili flakes or gochujang
How
- Simmer everything together for 5 minutes until thick and glossy.
5️⃣ Sauce + Serve
- Toss hot ribs in the sauce or drizzle generously.
- Finish with:
- Scallions
- Sesame seeds
- Extra chili oil if you’re unhinged (compliment)
